New Year's Day Hash and Eggs.

 What do you do with left over

prime rib from Christmas Day?  You make hash and eggs of course!  Begin by dicing up 3 small to medium potatoes and saute them in a little bit of bacon fat.  Let them cook for about 15 minutes before adding a medium onion (also diced) and a dash of salt and pepper.  While the potato/onion mixture is cooking, cut your prime rib into small pieces (remember, the meat is already cooked so it doesn't need as much time in the pan as the vegetables).  Add the prime rib to the pan and saute for another ten minutes or so. Cook two eggs over easy and serve on top of the hash.
