A fresh tomato and egg scramble for breakfast.

Cherry tomatoes are relatively easy to grow; even in container gardens.  There's simply no excuse.  Your local grocer is always an option!

 I like to pick them when they are just about ripe.  If I don't, I'm at the mercy of my resident chipmunk.
Begin with your pan on low/medium heat and toss in a cup of tomatoes and a generous cup of spinach.  Add a teaspoon of olive oil and heat.
 
Heat until the spinach begins to wilt.
Scramble four fresh eggs in a separate bowl.
 Add the scrambled eggs to your spinach and tomato mixture.

  Add one cup of shredded Swiss cheese to the egg mixture in the pan.

 Leave on low heat until the cheese is melted.

 

Serve hot with toast and coffee.  Makes a delicious breakfast or lunch!
